Eating sustainably isn’t always simple, so I’m here to share what I’ve learned in my years of studying and working in the field. My goal is that after this workshop you’ll be more informed to make decisions for not only your health but the health of the planet and its future inhabitants.We’ll talk about the Planetary health - diet proposed by the EAT-Lancet commission and look at what we would need to change to be able to feed the planet in the face of the increasing population. Nice to meet you, I’m Noora Eklund, a nutrition coach and a vegan chef from Finland. I’m passionate about creating beautiful plant-based dishes, organizing community events, and sharing my knowledge on how to eat as sustainably as we can, whilst still enjoying what we eat.I am currently finishing my studies in Global Nutrition and Health, in Denmark and I’ve traveled and worked abroad for the past 6 years. I ran a vegan food truck in Switzerland and have participated in retreats in Mexico and Spain as a chef/nutrition expert. I offer online nutrition coaching and am planning to do my first retreat here in Finland this summer.
